- 1/2 C Black Beans
- 1/2 C Brown Rice
- 4 oz cooked Chicken Breast
- 1 t Cumin
- 1/2 T olive oil
- 1/2 Red and Green bell pepper (diced up)
- 1/4 diced yellow onion
- Broccoli (optional)
Make rice (follow box instructions). Heat black beans on stove top until hot. Saute bell peppers, onions, and broccoli in olive oil on hot skillet. While beans and veggies are cooking, chop up cooked chicken breast (make sure to season with cumin)!
Once the rice is finished, and the beans and veggies are cooked, mix the chicken and veggies in bowl with seasoned chicken.
To make the bowl--first add in cooked rice, then layer with black beans, and finally, the chicken and veggie mix! Season with salt and pepper, or more cumin for extra spice!
