- 3/4 cup canned pumpkin (180g)
- 1 scoop vanilla whey protein (30g)
- 1/2 cup egg substitute (92g)
- 1/2 t baking powder
- 1/2 t vanilla
- 1 t cinnamon
- 3 packets Stevia
- Mix everything together and cook on a hot skillet! Be sure to use non stick spray and test the edge before flipping.
I also added in some chocolate chips because let's be real, chocolate for breakfast is the best!
Makes 8 pancakes:
