I have made this a couple of times actually! It is so easy to make and has great colors and flavors. Each time I made it my family liked it :) It calls for mushrooms but my mom is allergic, so I omitted those.
This was a big hit with my parents! And it was SO easy to make!! Literally just throw everything in a casserole dish and bake it! But I won't lie...the first time I made this, I messed with the oven and when I took the chicken out after an hour it was still raw!! OOPS! So my dad pushed some buttons on the oven and we tried it again...came out nicely cooked after ANOTHER hour! But it was worth the wait! We added some salsa on top after too for extra flavor!

Note: If your chicken and frozen corn are still partially frozen, the casserole will take longer to cook. So, make sure they’re both thawed before hand.

I LOVE chicken. Pretty much any type of chicken, besides BBQ...for some reason it's my least favorite. Which is defeating to my dad when he cooks it in the summer. Oh well! And since I also like eating healthy, almost every one of these dishes is healthy and full of flavor!
