Chipotle is probably one of my favorite "fast food" places. Actually, I really don't consider that to be fast food. It's super healthy (if you opt the sour cream, guacamole, and cheese!) and it basically a sit down restaurant. It can get expensive ordering food all the time, and this is a simple copy-cat dish of their infamous Burrito Bowls!
Make rice (follow box instructions). Heat black beans on stove top until hot. Saute bell peppers, onions, and broccoli in olive oil on hot skillet. While beans and veggies are cooking, chop up cooked chicken breast (make sure to season with cumin)!
Once the rice is finished, and the beans and veggies are cooked, mix the chicken and veggies in bowl with seasoned chicken.
To make the bowl--first add in cooked rice, then layer with black beans, and finally, the chicken and veggie mix! Season with salt and pepper, or more cumin for extra spice!
Winner winner, Chicken Dinner...
I LOVE chicken. Pretty much any type of chicken, besides BBQ...for some reason it's my least favorite. Which is defeating to my dad when he cooks it in the summer. Oh well! And since I also like eating healthy, almost every one of these dishes is healthy and full of flavor!
