I give this dish full credit to my sister, Christine. She made this dish for me for the first time tonight and it was SO GOOD. The sauce....oh my...I could eat it by the spoonful! She's made this dish numerous times before, and always raved about it, but I needed to try it for myself to see what all the fuss was about. And boy was I missing out! The chicken literally just fell off the bone and the juice/sauce was so sweet! We served it with white rice and broccoli, and I highly suggest pouring the sauce over the rice! (Extremely kid friendly too! One of my nieces had seconds!)
1. Mix all ingredients, except chicken, in a bowl.
2. Place chicken pieces in a baking pan. Sprinkle with pepper. No extra salt is needed.
3. Pour sauce over chicken and make sure it’s coated well.
4. Roast uncovered at 400 degrees for 1 hour to 1 hour and 15 minutes until chicken is done. Baste several times during cooking. This is the way the chicken will look when done.
Winner winner, Chicken Dinner...
I LOVE chicken. Pretty much any type of chicken, besides BBQ...for some reason it's my least favorite. Which is defeating to my dad when he cooks it in the summer. Oh well! And since I also like eating healthy, almost every one of these dishes is healthy and full of flavor!
