Usually during the work weeks I cook for Steven and I because he doesn't get home until late, so weekends I usually hand over the oven mitts and spatula to him. Luckily he gets to work from home on Fridays, so crock pots are the easiest thing to do while he works. This was a simple dish, not very many ingredients, but full of flavor. The sauce was excellent!! Well done, babe.
For the veggies, I used my new Veggetti utensil I got from Christmas and sauteed zucchini for a little on the stove and mixed it in with the rice and leftover sauce from the crock pot.
I haven't had this dish yet, but it's my brother in law and sister's favorite! They always rant and rave about it...so this is next on my list!
Serves 6 (with white rice and broccoli)
1. Wash chicken; pat dry. Place chicken in slow cooker.
2. Combine melted butter, ketchup, vinegar, brown sugar, Worcestershire sauce, minced garlic, salt and pepper, hot pepper, chicken broth; pour over chicken.
3. Cover and cook on LOW for 5 to 7 hours, until chicken is tender but still moist.
4. Add pineapple and cook for 20 minutes longer.
I absolutely love this dish! Probably one of me and my boyfriend's favorites. Who doesn't love orange chicken from Panda Express?! This is pretty dang close to the flavor, minus all the fat and grease! (But I will admit, no dish will ever come close to the real deal from Panda.) Anyways, this was so simple to make, and the chicken fell apart so easily. So much flavor and oh so good. Steven even made it again for himself just the other day! It makes a lot, so there's leftovers to last you a couple of days!
What You’ll Need:
We served this with brown rice and broccoli. The best part is pouring the leftover juice over the chicken and rice!
This dish has a little bit of a story to it. We were planning on having a quiet Saturday night in after our long day we had planned. Steven prepared everything that morning and turned the crock pot on before we left for our day date. This day date included bottomless mimosas and hanging out with our friends. Well, one drink led to another, and by 3pm we were at a friend's BBQ and ended up staying there for dinner! (Don't worry, Steven went back to his apartment before to turn off the crock pot!) When we got back that night, he put everything in the fridge and cooked it the next day for himself. I am so mad I didn't get to try any but he said it was delicious! One of his favorites...dang-it! Guess that means he has to make it again for me :)
I think this was one of Steven's first crock pot meals. And it was a success! Ladies--if you're boyfriend is first starting out with crock pots, give them simple dishes like this!
What you need:
Tastes great served with white rice, especially with the yummy cooking juices!
So simple, and so delicious.
Up until Christmas I didn't have a crock pot. I don't know how I lived through college without one. They are the best inventions, so easy to make excellent meals. These are all super simple dishes! Unlike my mom who thinks crock pots should only be used during the winter, I think you can use a crock pot all year long!
