I made this recipe for a camping trip actually! My family and I love going camping and boating, and this weekend in particular was a "cousins only" trip. Needless to say, we had a great time. But camping with our family includes a lot of food and booze...so I decided to make a healthy dessert to make up for all of the junk we were eating. I decided not to tell anyone what exactly were in these brownies, especially my sister, because I didn't want people to judge them before tasting them! I brought them out the first night and within minutes they were half gone, and mostly from the guys! I finally told everyone what was really in them and they were impressed. Even the kids liked them! Hooray for healthy brownies!! (Who would have guessed you would get your vegetable intake through a brownie?!)
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces (optional)
2. In a large bowl, mix together the applesauce, mashed bananas and sugar.
Eating healthy takes commitment, it's a lifestyle.
I love food, that's a given...but I also love to eat healthy. I try to workout three times a week, and eat a lot of protein. These are some snacks, meals, and desserts that are healthy, but also very good! Eating healthy doesn't have to be plain and boring!
